Polycyclic aromatic hydrocarbons (PAHs) are a diverse group of organic chemical compounds known to be hazardous to human and animal health. Up to 70% of a person’s PAH exposure can be attributed to their diet, and yet, data for humans ingesting PAHs via food remains scarce.
In this policy brief document, learn about the main analytical techniques available to monitor and measure PAHs. The role of metrology in ensuring the safety of our food is discussed, and some specific suggestions for policymakers are made.
